2015 J. Wilkes Cabernet Sauvignon
Paso Robles Highlands District
Aromatics: Black plum, currant, cassis, ripe black cherry with hints of cocoa nibs, toffee and cedar.
Palate: Fruity, juicy and ripe on the attack -- medium body plus with a rare combination of dense, delicious fruit notes and also a sense of balance and elegance, some Paso-dust minerality and a long, bright, fruity finish. Paso Highlands Cabernet
Sauvignon (85%) gives the wine breadth, currant/cassis notes, big flavor and dense heartiness. Lagrein (15%) adds some grip and mild tannin as well as some complex mid-palate notes and a good, fruity / earthy finish.
Food Pairing: Strong, firm, pungent cheeses (Epoisses, aged Cheddar, Taleggio, Halloumi, Stilton) are a no-brainer for a full - bodied Cabernet Sauvignon such as this. Grilled meats are an easy choice too - - steak, lamb, venison, pork chops, and make sure to make some reduction sauce with a splash of this wine! Cabernet also loves mushrooms, hearty bean-based dishes and nightshades (tomato, eggplant, and peppers).
Aging: No need to age this wine, as it is delicious and ready ont he release, but... Tasting Cabernet made from this property since 2007, I, Wes, would say this wine will continue to age (and imrpove for those that like bottle-aged reds) for 5-7 years for most palates, and will show the highest fruit persistence (primary fruit character) around late 2019. This wine should be decanted until 2020, and opening a bottle hours, if not days, before drinking will allow the wine to breathe and shine.
