2016 Santa Maria Valley Chardonnay

AROMATICS 
Granny Smith apple, wet chalk, toasty, savory French oak aromas, hint of browned butter, but the oak treatment is elegant enough to allow a lemon-blossom, floral character to emerge in the wine’s nose.

PALATE
Savory oak meets green-apple Jolly Ranchers with persistent apple and tropical fruit through the finish. Well integrated (wood andfruit) for such a young wine and offers a lot of subtle and delicious flavors early in its life. There’s a lot to love here-bright and rich, savory and nervey, balanced and delicious. Glasses empty quickly.

FOOD PAIRING
This wine is begging for some seafood poached in butter or presented with a Beurre Blanc sauce: sand dabs, sea bass, black cod. Hints of tropicality in the wine lend themselves to ideas of bacon wrapped shrimp with mango salsa, or traditional matches like Brie or Tomme-style cheeses.

AGING
Drink or hold until 2022, longer for full maturity.

2016 Santa Maria Valley Pinot Noir

AROMATICS
Big, bright, primary, cherry / red berry, spicy, sauvage and showy. Expect classic Santa Maria; Valley Pinot Noir aromas.

PALATE
‘Dead to rights’ classic Santa Maria Valley Pinot Noir: brambly, peppery bright and ripe cherry fruit, hints of game and saline mineral: bright, enticing, fruity with great liveliness in the palate and on the finish.

FOOD PAIRING
Insanely versatile with food. Safe to match with salmon, pork, chicken, lighter beef and game dishes such as tri-tip, quail, venison. Try it with a grilled goat-cheese napoleon with eggplant and root vegetables. The current brightness of this wine could make it a candidate for illuminating earthy dishes such as lentil stew, hummus, Cuban black beans and rice.

AGING
Drink or hold until 2025.
